Jewish American food takes time. They are slow cooked, cured, smoked, braised, rendered, sweet, sour, savory, warm, fresh and homey. We want to be up front and disclaim that we are not following kosher practices, so what we are saying by non-kosher Jewish foods is that; it’s the Ashkenazi Jewish American food we grew up with in New York like: Slow Cooked Brisket, Noodle Kugels, Latkes, Kasha Varnishkes, Roasted Chicken, Matzah Ball Soup, Gefilte Fish, Tzimmes and Challah. It is also foods we had with friends and family from restaurants in our communities such as Chinese, Japanese, Greek, Italian, Diners, Deli and Bagels.
